Winter is no excuse for not indulging in ice cream or gelato. Aside from Gelato Messina popping up in Surry Hills, the other talk of the town in the gelato world is N2.
Named after the chemical formula for nitrogen gas, this gelateria uses liquid nitrogen to freeze real ingredients into gelato, on order!

The flavour combinations are quirky and include menu options such as cough syrup, rosemary and honey, spicy strawberry, and earl grey infused caramel!
The whole place really plays up on the mad scientist theme too - they all wear lab coats and glasses, ingredients are stored in various chemistry lab style flasks and beakers, and the large liquid nitrogen tanks are for all to see.

After 2 visits on 2 consecutive days, I think N2 is definitely more than just a gimmick. Yes, it's super cool to see them churn the gelato in colourful KitchenAid Mixers from scratch, right before your eyes, but the flavours are quirky and really do work. Plus, gelato really can't get fresher than this!

Scoops are $6 each. They say you don't need a second scoop, which is rather true!
I'm still tossed on which flavour is my favourite... The earl grey infused caramel is subtle but luscious; the spicy strawberry has an addictive kick as well as tasting really fruity; the rosemary and honey is just so fragrant and the green tea and mixed pepper is sharp and refreshing! Oh, the Hainanese coffee is beautiful too!
Despite the cold weather, there were queues on both visits! I can't imagine how popular N2 will be when Sydney warms up!
