I was faced with the daunting challenge of hosting my little sister's kitchen tea (bridal shower) a few weeks ago. With little prep time available, I planned the menu around all things quick and easy, that would require minimal ingredients. The last thing I wanted to do was run around a supermarket the night before. I'd considered just buying boxes of tarts and cakes from nearby patisseries, but what's the fun in that?
So the night before, I prepared a chocolate shortcrust pastry and cut off the crust of 3 bags of sandwich bread.The next morning, scones were baked, the construction of the chocolate and pear tart was completed, a strawberry mille feuille was attempted and a production line of gourmet sandwiches was in action.

These sandwiches turned out to be a crowd pleaser! I'm definitely keeping the recipes on file as they were such a hit, and here it is for you, shall you ever need to host an afternoon tea too!

Makes 4 Sandwiches
Ingredients
200g cooked peeled prawns, coarsely chopped
⅓ cup (80g) mayonnaise
2 tbs finely chopped dill
1 tbs lemon juice
8 slices white bread
50g softened butter
Method
Use a serrated knife to remove and discard the crusts.
Combine the prawns, mayonnaise, dill and lemon juice in a small bowl. Taste and season with salt and pepper.
Place the bread on a clean work surface and spread evenly with butter. Spoon the prawn mixture evenly among the slices and gently smooth. Sandwich together with remaining bread slices.
Cut each sandwich into thirds to make finger sandwiches. Place on a serving platter and serve immediately.

Ingredients
200g smoked salmon
1 green cucumber, peeled, seeded, thinly sliced
8 slices wholemeal bread
100g spreadable cream cheese
Method
Use a serrated knife to remove and discard the crusts.
Place the bread on a clean work surface and spread evenly with cream cheese. Top half the slices with smoked salmon and layer with cucumber slices. Sandwich together with remaining bread slices.
Cut each sandwich into thirds to make finger sandwiches. Place on a serving platter and serve immediately.

2 tbs horseradish cream
150g slices rare roast beef
1 cup watercress sprigs
8 slices multigrain bread
50g softened butter
Method
Use a serrated knife to remove and discard the crusts.
Place the bread on a clean work surface and spread evenly with butter. Lightly spread horseradish cream on each slice. Top half the bread with roast beef and top with watercress sprigs. Sandwich with remaining bread slices.
Cut each sandwich into thirds to make finger sandwiches. Place on a serving platter and serve immediately.

Thanks! It's actually a 3 in 1 cake stand! You can turn it upside down to make a dips platter or flip the lid and sit it on the dips platter to turn it into a large serving bowl! It was an awesome find at Victoria's Basement!

Awww thanks! I was so glad everybody turned up late as I was badly behind schedule, but am super relieved it all fell into place eventually!
