Afternoon Tea Sandwiches

I was faced with the daunting challenge of hosting my little sister's kitchen tea (bridal shower) a few weeks ago. With little prep time available, I planned the menu around all things quick and easy, that would require minimal ingredients. The last thing I wanted to do was run around a supermarket the night before. I'd considered just buying boxes of tarts and cakes from nearby patisseries, but what's the fun in that?

So the night before, I prepared a chocolate shortcrust pastry and cut off the crust of 3 bags of sandwich bread. The next morning, scones were baked, the construction of the chocolate and pear tart was completed, a strawberry mille feuille was attempted and a production line of gourmet sandwiches was in action.

Hosting a kitchen tea - afternoon tea

These sandwiches turned out to be a crowd pleaser! I'm definitely keeping the recipes on file as they were such a hit, and here it is for you, shall you ever need to host an afternoon tea too!

oooh those sammies look perfect! And I love the glass cake stand!

Thanks! It's actually a 3 in 1 cake stand! You can turn it upside down to make a dips platter or flip the lid and sit it on the dips platter to turn it into a large serving bowl! It was an awesome find at Victoria's Basement!

Delicious looking sandwiches, prawn and dill look particularly so.

Thanks, i think that was my favourite from the three too!

Lovely looking afternoon tea - your sister is lucky to have you!

Ooh purty...! Since I won't be doing all that work any time soon, I'm going to high tea on the weekend :)

LOL, good idea! I think i'd like to do that next week too.

What a fabulous spread - the tart sounds divine and the sandwiches look so pretty. Your table setting is lovely - esp the flowers and old style china. What a lovely gift for your sister.

It was really lovely seeing it all come together! Thanks for noticing the little touches :D

This will come in handy! Hosting a High Tea at my place in December! eeeep!
